Pesto Chicken Pasta with Salad

Pesto Chicken Pasta

1 Pound Pasta: bowtie works well
1/2-3/4 Pound leftover chicken, cut in strips or shredded
1/2-3/4 cup store bought pesto
1 diced tomato
1 cup freshly grated parmesan
2 Tbsp heavy cream

Prepare pasta as directed. Slightly heat the chicken in the microwave or another pan. Toss pasta with chicken and remaining ingredients.

Salad with Lemon Vinigrette

1 head lettuce, washed and torn into bite size pieces
2 scallions, chopped
2 Roma tomatoes, Chopped
1/2 cucumber, sliced
Croutons
1/2 cup fresh herbs; basil, cilantro, parsley or a mixutre
Dressing:
1 Tbsp balsamic vinegar
3 Tbsp olive oil
1 clove garlic, minced
1 tsp dijon mustard
2 Tbsp lemon juice
Salt and Pepper to taste

Whisk together ingredients for dressing. Place salad greens and toppinging in a large bowl and toss with dressing.
